Young Aussie Meat Judging Team Excels in USDA Grading

For the first time in 17 years, the Australian intercollegiate meat judging team has been triumphant at a US competition, winning the Southwest Invitational, which is hosted by Texas Tech in Lubbock, Texas.

The competition is part of a one-month annual tour of the US industry. It is intended to build industry leadership capacity across the supply chain by exposing students to US production systems and supply chains.

The team of five students (who were selected from the Australian competition) includes Emily Webb Ware, Lachlan Woods, Jake Bourley, Bridie Luers and Harriet Moss (pictured above). According to Tim Ryan, the team’s head coach, “the team achieved an outstanding result against the locals, through mastering the USDA grading system over the past week and training extremely hard in the chillers… They are a talented group of students who have a real passion for the industry. It will be exciting to see them continue to develop as they enter the workplace.”
