4 New Year’s Resolutions for Steak-Lovers

Since it’s the new year and all, we’ve compiled 4 new year’s resolutions we reckon should be on every meat lover’s list. The great thing about these resolutions is that they’re an excuse to eat steak – unlike your resolution to go to the gym more and floss every morning, you will actually want to do these every week.

Resolution #1: Master a Perfect Steak

Mastering a perfect steak isn’t hard, but it does take some practice. The basic steps for getting a steak just right (according to Jamie Oliver) are:

  • Take steak out of fridge and allow to come to room temperature (approx one hour before cooking
  • Rub with olive oil, salt and pepper
  • Add to hot pan. Cook for 6 minutes for medium-rare, or to your liking, turning every minute
  • Want extra flavour? Halve a garlic clove and rub it over the steak every time you turn it. You can also rub with steak with a knob of butter, or create a herb brush by tying herbs like thyme and rosemary to the handle of a wooden spoon and brush this over the steak every minute or so
  • Once steak is cooked to your liking, rest it on a plate for about 2 minutes
  • Carve it against the grain with a sharp knife, and serve the the resting juices drizzles over the top

#2: Learn a New Steak Cooking Technique

Ever cooked steak on a shovel? How about a pitchfork? 2018 might be the year to give these unconventional cooking techniques a go. Although grilling and frying are the go-to steak cooking techniques, why not take a step out of your comfort zone and try something new? If you want something that isn’t too crazy, you can try oven-broiling, reverse searing or even cooking sous vide (don’t forget to sear the steak before you eat it!). Alternatively, you can try out these 5 unconventional grilling methods.

#3: Perfect Your DIY Marinades

Marinades are a great way to add extra flair to your steaks, and experimenting with different flavour combinations is really fun (and an excuse to eat more steak). Any beef cut can be marinated – all you need to do is make the marinade, marinate the meat, place the meat in a sealed plastic package and then refrigerate for up to 24 hours. To make marinade recipes as simple as possible, we’ve put the process into 6 steps. Want some ingredient inspiration? Ingredients that work really well include horseradish, mustard, red wine, peppercorns, garlic, ginger, wholegrain mustard, brown sugar, allspice, cumin, paprika, wasabi paste, chilli and garlic salt. Get creative!

#4: Nail a Steak Sauce

Although high quality beef (like our Grasslands or Black Angus beef) tastes wonderful on its own, making a steak sauce can add a wonderful balance of flavour and moisture. The most popular steak sauces – which you should definitely have in your repertoire – are mushroom sauce, pepper sauce, herb butter, bearnaise and Diane sauce.
